SAKE2020 #9 Sake Salon with Tatsuriki
When it comes to Yamadanishiki, the most famous sake rice for making Ginjo-shu, you can’t do without Tatsuriki or Mr. Honda the former president of the brewery.
About 30 years ago, Mr. Honda visited the wineries in France. It was the first time for him to see the historical and prestigious wineries in Bordeaux and Bourgogne. There he learned the importance of terroir for the value of wines, how small the size of the domaine de la Romanee-Conti compare to its reputation.
He decided to pursue the quality of sake rice with full of his heart, and his goal was to become the Romanee Conti of Japan. At his 70s, he entered master course of Kyoto University to study the soil for sake rice which surprised the people around him.
At the salon, you can listen to his long story of passion along with various sake made in different area of Yamadanishiki producing area.
