The picture on the top is not a Champain. It’s a sparkling sake!

“Mizubasho Pure” is one of the flagships of Nagai-shuzo. Sparkling type of sake has become popular these days among the younger generation, but it is the first Champaign style pasteurized sparkling sake with good amount of delicate gas and without any sediment left in the bottle.

It was a long way of trial-and-error to find the best balance of gas so that the bottle doesn’t break during the process of pasteurization. The method is patented by Nagai-shuzo.

Nagai-shuzo is located in the center of Kawaba in Gunma. Kawaba is a small village in a rural area. It’s not a convenient place, but is blessed with beautiful nature and different scenery of the four seasons. It is surrounded by fruits trees, rice fields, forests, and clear water of the creek.

Noriyoshi Nagai, the president of Nagai-shuzo, says that he loves Kawaba better than any place in the world. It will be a great chance to listen to Nagai-san’s story of his brewery and the charm of Kawaba.

“Nanbubijin”

Cheerful and bright “saviour of sake” from Iwate

The brewery of “Nanbubijin,” internationally know as “Southern beauty,” is located in the north end town Ninohe in Iwate. Surrounded by mountains and covered with snow in winter, the brewery is blessed with plenty of good medium hard water which vitalize the fermentation of their sake.

Kosuke Kuji, the president, is a charactor. His energy to pursue his goal seems to be unlimited, but his is not a lonely wolf. He is always cheerfful, bright, and positive.

Nanbubijin, like most of the breweries in Tohoku area, was suffered by the Great East Japan Earthquake in 2011. Everybody tended to look down and was rather in a negative mood. Then he put one short movie on the Youtube, which totally changed the situation. His strong word instilled into the heart of people, and make them look forward.

You can’t miss his story.
Also, you can’t miss tasting his sake which has gotten both IWC Championship Award held in England and Plutinum Award of Kuramaster held in France this year.

When it comes to Yamadanishiki, the most famous sake rice for making Ginjo-shu, you can’t do without Tatsuriki or Mr. Honda the former president of the brewery.

About 30 years ago, Mr. Honda visited the wineries in France. It was the first time for him to see the historical and prestigious wineries in Bordeaux and Bourgogne. There he learned the importance of terroir for the value of wines, how small the size of the domaine de la Romanee-Conti compare to its reputation.

He decided to pursue the quality of sake rice with full of his heart, and his goal was to become the Romanee Conti of Japan. At his 70s, he entered master course of Kyoto University to study the soil for sake rice which surprised the people around him.

At the salon, you can listen to his long story of passion along with various sake made in different area of Yamadanishiki producing area.

You can’t miss it.

Chris Hughes, the instructor of WSET level three, will be with you to explain in details.

Brewery from Akita “Taiheizan(太平山)”

“Taiheizan,”, internationally know by its “Tenko” super premium label, is named for the massive mountain that pierces the horizon just east of Akita prefecture’s capital city.

Taiheizan sake first captured Japan’s attention when introduced as the first chilled sake in 1933. Since then, it has been winning awards at home and abroad. Japan’s 1934 National Sake Award named it first among 5,169 competitors. London’s International wine Challange awarded Taiheizan its 1st Place Gold Trophy in 2009 and Ginjo/Daiginjo Trophy in 2014.

Shinichiro Kodama, the president, will be the guest. He will tell the storys of this exceptional brewery and explains about his sake making.

”Yamagatamasamune”

“Yamagatamasamune” is a very progressive brewery in Tendo-shi of Yamagata.
“Progressive” in a meaning to be truly “authentic.”
Tomonobu Mitobe, the president, digs into all processes from the making of rice to sake brewing thoroughly and finishes it to “ideal” sake for him. Yamagatamasamune is not any eccentric type of sake. It’s quite authentic. But the taste of it has keen-edged clearness like the tip of a sharp sword. It might come from the water he uses, but that’s not the secret. The true secret hides in his mind.

6th “Sake Salon” will offer you a chance to taste a sake from deep Gifu.
Matasuke Uenoda, the 9th generation kuramoto of Tenryo-shuzo (Gero, Gifu) will be the guest.
With his experience of working in the US for several years, he is trying to bring a new phase to this brewery with long history.
Gifu is a mountainous land, which means it is blessed with plenty volume of clean natural water. That is true for Tenryo-shuzo. It’s super-soft natural water characterizes the quality of sake.

長い歴史を誇り、日進月歩で進化を遂げていく日本酒。
今日の洗練された酒質の基礎を築き、また密度の高い技術革新が続いたのは、近代以降の酒造史にあると思います。

SAKE2020 Projectでは、高度に発展していく現在の日本酒が辿ってきた道のりを、歴史的な視点から紐解くセミナー・ワークショップをシリーズで展開します。

昨年9月に開催した第1回(吟醸酒質の確立と熊本酵母)に続き、第2回目は静岡のお酒を取り上げます。

1986年(昭和61年)の「全国新酒鑑評会」で、静岡の酒蔵が金賞10点を獲得しました。当時はまだ金賞受賞蔵数が100から120場程度の時代。全く無名のダークホースだった静岡勢の快挙に、日本酒業界は沸き立ちました。

この躍進の原動力となったのは、「静岡酵母」といわれる一連の吟醸酵母です。

それから約30年が経過していますが、この酵母から生み出される爽やかなスタイルの吟醸酒は、「静岡吟醸」という言葉で括られるほど今なお多くの日本酒ファンの人気を集めています。

また静岡酵母のセンセーショナルなデビューは、各県が吟醸酵母の開発を進める嚆矢であり、以後の吟醸酒や鑑評会の動向を変える、大きな節目になったともいわれています。昨年末、静岡酵母の生みの親として知られる、元静岡県工業技術センター主管・河村傳兵衛さんがお亡くなりになりました。

今回は、静岡酵母が果たした役割を、日本酒ジャーナリストでSAKE2020プロジェクト代表の松崎晴雄と「しずおか地酒研究会」主催のコピーライター鈴木真弓さんの講演、そして鈴木真弓さんが2008年に制作したドキュメンタリー映画『吟醸王国しずおか』にて振り返りながら、その偉大な功績を称えたいと思います。

映画にも登場する、静岡吟醸を代表する「喜久醉」ほか蔵元数社にもご参加頂きますので、酒を酌み交わしながら、大いに語り合いましょう。

Shuntaro Saito, the president of Kirinzan-shuzo (Tsugawa, Niigata) will be the guest.
He is handsome and sophisticated but has a very passionate samurai sprit in him. Since long time, Kirinzan has been brewing with a philosophy to make dry and smooth sake that reflects the quality of water in the area when many breweries around Japan were heading to rich sweet type of sake.
Together with the farmhouses, Kirinzan has been putting effort to improve the quality of local sake rice grown in the region. Their story of brewing from rice to sake is worth listening to.
