Organic Brewery from Fukushima
Niida Honke, known by the “Kinpo Shizenshu” or “Odayaka” brand is without doubt one of the top organic sake makers in Japan.
Yasumitsu Niida, the former president of the brewery, started making organic sake in 1967 with the belief that sake should be good for one’s health. The brewery has continued to produce organic style sake and since 2011, all of its sake is organic, which is very rare in Japan.
How does organic sake taste differently from ordinary sake?
You need to taste it for yourself instead of listening to the opinion of others. When you experience organic or natural style sake, don’t let your mind fill your head with ideas of what you think it should be, but just purely enjoy its natural smooth aromas and flavors, which you will fall in love with.
Yasuhiko Niida, the president and brew master, is a very gentle and warm person. You will be charmed by his personality as well as his sake.
